Doughs that has a lot of moisture or need longer time proofing, are ideally baked in wooden frames.
Almost alays are loaf tins made from metals used for baking breads, however be aware, when proofing for more than 12 hours, lactic acid developing within doughs may work aggressivey on these metals. In doing so there is a risk of metals leaking in to the bread. It is heard of, how people have experienced aluminium tasting breads that had spots on them, after using Loaf tins made from aluminium. To be safe and avoid any potential contamination of your breads, always go for wood, glass, stainless steel or ceramics.
Aurions bakery once tried baking pumpernickel (rye bread) using wooden frames with worn iron trays at the bottoms. No sooner had the breads been taken out and the trays were exposed to air, they began to rust. Today the bakery will only use stainless steel baking trays covered with oiled baking paper.
Using standard yeast does not cause the development acidity in doughs as does sourdough, preferments or using the honey-sugar method. When baking with theese it is very important you remember to use wood, glass or stainless steel.
