Emulsifying salts (E331, Sodium citrate) is used in the food industry for a variety of purposes.

Emulsifying salts E331 is permitted in organic food production.

Technically, the emulsifying salt has the effect that the calcium in the cheese which ensures that the cheese is hard gets dissolved with emulsifying salt which causes the cheese structure to become soft.

Usage

The dairy industry uses emulsifying salt to manufacture processed cheese. Mixing emulsifying salt with water and hard cheese while applying a little heat will melt the cheese and the water will remain evenly distributed in the cheese. The cheese remains spreadable after cooling.

Storage and Durability

Store dry at normal room temperature.

Recipe

Example of the preparation of processed cheese:

250 g of hard cheese, cut into small pieces or grated
10 g of emulsifying salt
50 g of water

Mix water with emulsifying salt in a pot and heat slowly.
Add the cheese and stir under continued heat until the cheese is melted.
Pour the melted cheese in an appropriate container and allow to cool.

Variations of your choice:
- Water can be replaced / combined with beer, wine or the like.
- Flavour may be added in the form of bacon, ham cuts, cooked shrimp and the like.
- The cheese can be any good hard cheese - the better hard cheese, the better processed cheese.

Facts about the emulsifying salt:

- Crystalline powder with a pleasant, salty taste.
- 1 teaspoon (5 ml) weights about 5.6 g.
- Dosing instructions for the manufacture of processed cheese: 3-5% (wt).
- Soluble in water.
- Non-toxic and chemically stable.
- Fully biodegradable and can be disposed of with general waste or sewage.
- Obtained by complete neutralization of citric acid (C6H8O7) with pure sodium hydroxide or carbonate and subsequent crystallization.
- Chemical name: Sodium Citrate dihydrate (Na3C6H5O7 ∙ 2H2O).
- Allowed in organic food.
