Tool for testing and taking out samples from hard cheeses. Stick the tester in to the cheese from the side of it, tvist it around and pull back slowly. After inspection of the sample, put the sample piece back into the hole and cover the area with a layer of cheese coating to seal it.
The sample provides you with an idea of development of the cheese during the maturation process, - visuel appearance, taste and scent.
